These are great for dipping into Hummus, Smoked Eggplant Dip, Spicy Red Pepper and Walnut Spread, or any of your favorite dips. Drizzle olive oil over the toasted pitas and season with different herbs and spices, and they are ready to go.


Specialty Ingredients

  • Sumak or zahtar, both found at specialty markets or online.

For the Pita Dippers

  • 3 medium-sized pitas (About 6 inches each)
  • 2 tablespoons extra-virgin olive oil
  • Seasonings (see variations below)


Prepare Ahead

You can prepare these several days in advance and store them in an airtight container at room temperature.

To Prepare the Pita Dippers

Preheat the oven to 350°F. Cut each pita into quarters, then cut each quarter into quarters, yielding a total of 16 triangles per pita. (Do not separate the pita halves.)

Place the pita triangles side-by-side on a foil-lined baking sheet. Bake on the middle rack of the oven for about 15 to 20 minutes or until they are crisp and toasted all the way through. Different brands of pita vary in thickness; therefore, the baking time can vary as well. Remove and set aside to cool.

Gently transfer the cooled pita dippers to a large bowl. Drizzle olive oil over them and gently mix, coating the pita with the oil using your fingers. Sprinkle any one of the seasoning choices below over the pita and gently mix again.

Once they are completely cooled, you can store them in a container with an airtight lid.

Paprika and Onion

Sprinkle 1 tablespoon granulated onion (not powdered) and teaspoons ground paprika over the baked pitas.


Sprinkle 2 tablespoons zahtar over the baked pitas.

Garlic Pepper

Sprinkle 2 teaspoons California-style (coarsely ground blend with red bell and black pepper) over the baked pitas.


Sprinkle 2 tablespoons sumak over the baked pitas.


Sprinkle 1 tablespoon crushed rosemary over the baked pitas.


Sprinkle 2 tablespoons Italian seasoning over the baked pitas.
