Ejotes (green beans) were not a vegetable I was a fan of when I was a kid. However, I have a creative mom, and she mixed my green beans into scrambled eggs, along with other flavor boosters like garlic and onion, to make sure I would eat them. I came up with this dish to do the same for my Munchkin. Although most American children aren’t used to eating Tabasco, my kid, like many Mexican children her age, is just starting to delve into the land of spicy food.
