  • About

Succotash is an Indian word for a dish that contains both corn and beans. I use broad beans and corn in this tasty version.

Ingredients

  • ¼ pint (150 ml) water
  • 1 teaspoon (5

Method

Bring the water with the salt and sugar to the boil. Add the beans and corn, fresh or still frozen, to the pan and simmer for about 10 minutes, or until the beans are just tender. Drain and add the butter, cream and some pepper. Stir over a moderate heat until the cream and vegetables are very hot. Serve at once.
