Frangipane is a rich, almond-flavoured paste used in patisserie making and as a filling forcroissants, Danish pastries and pithiviers. Frangipane is also the name of an almond-based crème pâtissière. The name is thought to have been derived from a sixteenth-century nobleman, Marquis Frangipani, who invented a perfume made from bitter almonds, which he used for scenting ladies’ gloves.
