Thailand is a bountiful country and it is a joy to sample its wide variety of fresh vegetables: there are three growing seasons in much of the country and freshness is never a problem. Many Thai vegetables, formerly seen as exotic, are now available in Western speciality food shops and supermarkets. Here I suggest an assortment of vegetables but you may choose your own favourites.
