These are easy-to-make and elegant cookies. Sablé means “sandy” in French and refers to the crumbly texture of this cookie. They may be varied infinitely by adding solid elements, such as nuts, chocolate chips, or diced dried or candied fruit to the dough. Or you could roll the formed dough in cinnamon sugar or chopped nuts to encrust the outside—use your imagination.
