There are lots of popular recipes around for a refrigerator cookie with a date filling. They gave me the idea of using a Sicilian-inspired fig filling in a similar type cookie. These are perfect for the holidays—they have that requisite spicy flavor we always associate with Christmas cookies.

Ingredients

Cookie Dough

  • 2 cups all-purpose flour
  • cup sugar
  • ¼ tea

Method

  1. For the dough, in the work bowl of a food processor fitted with the steel blade, combine the flour, sugar, salt, and baking powder. Pulse several times to mix. Add the butter and the orange zest and pulse repeatedly at 1-second intervals until the mixture is fine and powdery.
