These little knots of delicate fried dough are similar to bugnes, but more elaborate both in flavor and in presentation.

Ingredients

  • 3 tablespoons unsalted butter, softened
  • 3 tablespoons granulated sugar
  • ½

Method

  1. In a large bowl, beat together the butter, sugar, and salt with a medium rubber spatula. Whisk in one egg, then the other; the mixture may appear separated—that’s all right. Use the rubber spatula to stir in the flour and form a soft dough.
  2. Scrape the dough onto a floured work surface, and using a bench scraper or spatula, fold it over on itself several times.
