Why this fragile cookie should bear this name is a mystery. It is one of the cookies that the Swiss always include in their Christmas assortments. But it is also popular, with good reason, all year long. Thanks again to Thea Cvijanovich for the dough recipe.

Ingredients

  • 12 tablespoons ( sticks) unsalted butter, softened
  • ¾ cup confectione

Method

  1. To make the dough, in the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and the ¾ cup sugar on medium speed until soft and smooth, about 3 or 4 minutes. Beat in the salt and the vanilla.
  2. Remove the bowl from the mixer and use a rubber spatula to incorporate the flour. Scrape the dough onto a piece of plastic wrap
