Juno bakery also shared this recipe for traditional crackers, which are common in Copenhagen. They roll the dough out into large thin 25cm round discs, then cut out a small hole from the centre with a 5cm cookie cutter. You can also make rectangles or ovals.

Ingredients

  • 100 g sourdough starter (buy online)
  • 100 g (2⁄3 cup) wholegrain øland wheat flour

Method

Day 1

Mix all the ingredients together with 100 ml water until it’s a firm dough. Place the dough in a container with a tight-fitting lid, cover and leave to rest until the next day.
