Ingredients

  • 1 cup confectioners’ sugar
  • 3 tablespoons hot water
  • 1 egg white
  • Salt to taste, if desired
  • ¼ teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract

Method

  • Put the sugar and water into a saucepan and cover. Bring to the boil and cook until the sugar is dissolved.
  • Put the egg white into the bowl of an electric mixer. Add the salt and cream of tartar and start beating on high speed while gradually adding the syrup. Beat 4 or 5 minutes, or until the frosting is spreadable. Beat in the vanilla.
