Ingredients

  • 1 medium-sized onion, chopped fine
  • 1 teaspoon bacon drippings
  • 1 teaspoon paprika
  • 1 tablespoon tomato purée
  • 6 green peppers, sliced
  • 1 teaspoon salt
  • 1 pound smoked sausage
  • 5 hard-boiled eggs

Method

  1. Fry onion in bacon drippings. Sprinkle with paprika and immediately add ¼ cup water. Cook until liquid disappears and only clear fat remains.
  2. Add tomato purée and sliced green peppers. Add salt. Add sausage and cook under a heavy lid over low heat for about 20 minutes.
  3. Meantime, slice hard-boiled eggs. Take the cooked sausage from the pot and slice it.
  4. Place half of the green peppers in an ovenproof casserole. On top of the peppers put sliced sausage and sliced eggs. Finally cover with the rest of the peppers. Pour sauce on top.
  5. Bake the peppers in a 375°F. oven for another 10 minutes, and serve.
