Ingredients

  • 1 pound dried white beans
  • 1 bay leaf
  • ½ pound do

Method

  1. Wash beans well and let them soak in water overnight. (If beans are several years old, add a teaspoon of baking soda to the soaking water.)
  2. Add bay leaf and two thirds of the bacon in one chunk to the beans and cook all together for about 1½ hours, till beans are tender
