Ingredients

  • 1 pound dried white beans
  • 1 bay leaf
  • ½ pound double-smoked bacon
  • 1 tablespoon flour
  • 1 small onion, minced
  • 1 garlic clove, crushed
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • ½ cup sour cream
  • 1 teaspoon salt

Method

  1. Wash beans well and let them soak in water overnight. (If beans are several years old, add a teaspoon of baking soda to the soaking water.)
  2. Add bay leaf and two thirds of the bacon in one chunk to the beans and cook all together for about 1½ hours, till beans are tender. Remove ½ cup of liquid and reserve.
  3. Chop the rest of the bacon into little pieces and melt in a frying pan. Add flour, onion and garlic, and cook for a few minutes. Add cool reserved broth and stir well.
  4. Drain the cooked beans and return them to the pot. Add bacon and onion mixture, stir, and cook over very low heat for 5 minutes. Add vinegar, sugar and sour cream. Add salt and adjust to taste.
  5. Cut the bacon chunk that was cooked with the beans into very small dice. Mix into the beans. Cook for a few minutes longer, and serve.
