Fresh fava beans are sometimes hard to come by. They start to make their appearance early in the summer, and when they are still young and tender, the whole vegetable can be used. When the pods of the fresh beans toughen, as they grow larger, they are usually shelled and skinned. Since the two kinds are dealt with differently, two separate recipes are given.
