A bavarois is an egg-based custard folded through with whipped cream, and flavoured with chocolate, coffee, praline or even fruit. This bavarois is simply laced with real vanilla.

Ingredients

  • 3 leaves gelatine or teaspoons gelatine powder
  • 2 eggs

Method

  1. Lightly grease four 250 ml (8 fl oz) capacity moulds of any shape, then soak the gelatine leaves or powder, following the Chef’s techniques.
