  • 200 g (7 oz) plain (all-purpose) flour
  • 75 g ( oz/ cup) caster (superfine) sugar
  • 2 tablespoons crunchy peanut butter
  • 1 egg yolk
  • 50 g( oz) lightly salted butter, softened


    PREHEAT THE OVEN TO 180°C (350°F/GAS 4). Combine all the ingredients together in a mixing bowl and work them together with an electric beater until you have a smooth, uniform dough.

    LINE A BAKING TRAY WITH A SHEET OF BAKING PAPER OR A SILICONE MAT. Shape the dough into walnut-sized balls, placing them on the baking tray as you go. Press them lightly with the back of a fork to mark them lightly.

    BAKE THE COOKIES FOR 10 MINUTES, UNTIL GOLDEN BROWN. When they come out of the oven, let them cool on a rack before eating.
