In cooking, and especially when making sweet dishes, there’s no need to know all the cheffy techniques: assembling ready-made ingredients is your best friend. For this recipe, you can vary the ice cream flavours, but stay within the flavour range of caramel, chocolate, vanilla, almond, praline, etc.

Ingredients

For the ice cream pie:

  • About 400 g (14 oz) oatmeal cookies (with chocolate chips if you like), store-bought or home-made

Method

MAKE THE ICE CREAM PIE. Crush the cookies into crumbs. Melt the butter and combine it with the cookie crumbs.

LINE THE BOTTOM OF A TART TIN WITH THE RESULTING CRUMBLY MIXTURE. Let it harden in the fridge for about 1 hour.

CREATE A LAYER OF ICE CREAM ON TOP OF THE PIE BASE, EITHER BY SCOOPING IT OUT, OR SPREADING IT WITH A SPATULA.
