Ingredients: 5-6 medium spuds; Knob of butter; Pinch of ground black pepper; Good handful of grated red cheese; 1 large egg; 5 tbsp golden breadcrumbs; 1½ tsp salt n pepper, plus a pinch; 2 tbsp grated hard cheese; Oil for shallow frying; Small handful of grated cheddar; Couple slices of good ham, finely chopped; Good handful of grated mozzarella (use more for the ultimate cheese pull); 1½ tbsp cornflour; 1½ tsp garlic powder, plus a pinch; 1-2 tbsp finely chopped parsley; 3 tbsp plain flour

How You Do It

Peel the spuds and cut them into small cubes, then chuck into a saucepan of water and bring to the boil. Meanwhile, prep your ingredients for the coating. Put the plain flour and cornflour in a bowl and add a pinch of garlic powder, salt and pepper. Crack the egg into another bowl and beat. Get a plate and put the breadcrumbs on it, then add the hard cheese, garlic powde
