Beef, mac n cheese and other stuff always go together like carrots and peas.
Mix the salt and pepper together in a bowl, then coat the beef medallions all over with the seasoning. Cook the streaky bacon until nice and crispy, then dice it up. Make the mac n cheese.
Cook the medallions in a hot pan with the butter, garlic and herbs until done to your crookedness, then take out and leave to rest while you squirt the hot mayo over the tortil
