This is exactly what it says it is – as you can see from the picture. So if you feel like pure mousse, no cake, then chill it in a bowl rather than baking it in a tin.

For some reason people are put off by the words ‘water bath’, but if you think about it, it isn’t so very hard to wrap a cake tin in foil, plonk it in a roasting tin and then, when the cake mixture’s in, pour hot water into that tin. And that little bit of extra effort makes a cake of such a dreamy, light texture.
