Some recipes are just meant to be, and this one happened when I had scallops in the fridge and truffles arriving in the mail. I decided to try them together, since a truffle slice fits perfectly atop a seared scallop. You can make this dish with any culinary truffle species (Tuber estivo is pictured here), but I love it with Oregon black truffles, which have a fruity, almost tropical aroma to them.
