  • Wash and stem elderberries. (Hold berries in palm of hand and pull stems off with wire egg beater, the kind shaped like tennis racquet.)
  • Combine elderberries, apples, sugar, salt and tapioca, crushing berries with spoon.
  • Spoon mixture into pie shell; dot with butter; top with pastry lattice.
