Unbaked 9" pie shell
1 c. sugar
3 tblsp. flour

Method

Chill pie shell 30 minutes.
Meanwhile, combine sugar, flour, salt and cinnamon. Sprinkle about 2 tblsp. of this mixture over bottom of chilled pie shell.
In large mixing bowl, lightly toss together sliced peaches and remainder of sugar mixture.
Pour peach mixture into pie shell. Dot with sour cream and sprinkle with grated cheese.
