Coconut Macaroon Pie

Country cupboards always have makings for this favorite, all-season pie

Ingredients

  • Unbaked 9" pie shell
  • ¼ c. chopped pecans (optional)
  • 2 eggs, slightly beaten
  • ½ c. water
  • c. sugar
  • ¼ c. flour
  • ¼ tsp. salt
  • 1 ( oz.) can flaked coconut (1⅓ c.)
  • ½ c. butter or margarine, melted (1 stick)

Method

  • Sprinkle pecans over bottom of pie shell. Combine remaining ingredients; pour into pie shell.
  • Bake in slow oven (325°F.) until golden brown, and almost set, about 45 minutes. Cool.
