Method

  • Combine heavy cream, sugar, coffee, salt and vanilla in large mixer bowl. Beat until thick.
  • Soften gelatin in water; heat over hot water until thoroughly dissolved.
  • Gradually add the dissolved gelatin to the cream mixture and continue beating until well blended. Pour into pie shell. Sprinkle coconut over top. Chill at least 1 hour before serving.
