Raspberry-Cheese Pie

A show-off pie for little effort—fix it several hours ahead


  • Baked 9" pie shell
  • 1 (3 oz.) pkg. raspberry flavor gelatin
  • 2 tblsp. sugar
  • c. hot water
  • 1 (16 oz.) pkg. frozen raspberries
  • 1 (3 oz.) pkg. cream cheese
  • 2 tblsp. milk
  • Sweetened whipped cream


  • Dissolve gelatin and sugar in hot water. Add unthawed berries and stir to break them up. Gelatin thickens as berries thaw.
  • Blend cream cheese with milk. Spread over bottom of cool pie shell.
  • Pour partially set gelatin mixture over cheese in pie shell. Refrigerate until set.
  • Serve garnished with spoonfuls of whipped cream.
