Kvass is best made with a starter – various types can be used, like sourdough, yeast, probiotic powder, ginger bug, or dairy whey. This recipe is for the classic kvass made from dry rye bread, with a sourdough starter or a bit of yeast. If you are a home baker you will have all the ingredients in your kitchen already. I don’t personally make this a lot but it is a very pleasant and refreshing drink. If you are unable to get hold of rye bread you could try it with other stale bread you have at home, and you could use a packet of dried yeast instead of sourdough starter. This drink is often used in cooking.
