After you have made your simple milk kefir and taken out the grains, you can choose to do a second fermentation. This will make your kefir creamier and less sour.

For a second fermentation you simply pour the ready-made kefir into a clean glass bottle without the grains, and leave it to ferment at room temperature for another 24–48 hours.
