These delicious small parcels, resembling purses, have a lovely crisp exterior and a soft creamy centre.

Ingredients

  • 75 g ( oz) unsalted butter, melted
  • 1 tablespoon olive oil

Method

  1. Brush two baking trays with melted butter.
  2. Heat the oil in a frying pan. Add the spinach and cook for 2 minutes, stirring continuously. Stir in the feta and ricotta until they become soft and coat the spinach. Season to taste with salt and freshly ground black pepper. Remove the pan from the heat, cool slightly, then stir in the egg, parsley and basil. Set asid
