In a bowl, whisk together the maple syrup, tahini, vinegar, oil, lemon juice, and miso until creamy and emulsified. (Or process in a blender.) Add the cayenne, season with salt, and stir well. This dressing will thicken up quite a bit as it sits, so thin with water as needed before using. It will keep refrigerated for up to 1 week.
