I borrowed this recipe from Buntyn’s Restaurant in Memphis.

Ingredients

  • lb (700g) yams(sweet potatoes)
  • 2 teaspoons butter

Method

Peel the yams and cut into slices 1 inch (2.5 cm) thick. Boil in water for about 20 minutes like ordinary potatoes until just cooked. Strain off most of the water, then add the butter, sugar, cornflour and water mixture, nutmeg and vanilla essence and mix gently but thoroughly. Simmer for 5 6 minut
