If you are going to the trouble of making this cheese, it might be a good idea also to make my favourite Indian pudding, Gulab jaman, because one of the important ingredients for this dessert is a quarter of a cup of the curds (chhena) before they are pressed into cheese. So, I might as well give you the recipe for this pudding here and now.
