Generally, salted or dried cod is simply boiled and served with potatoes, melted butter, lemon juice and dill. But I think salt cod is utterly delicious and decided to cook it in this Spanish fashion.

Ingredients

  • 1 thick piece of salt cod, weighing about 500 g (1 lb 2

Method

Soak the cod and rinse it, as above. Preheat the oven to 190°C/375°F/Gas 5.

Heat the olive oil in a large flameproof casserole and add the onion, cooking gently for about 15 minutes. Add the tomato sauce and chillies and cook for a few minutes more.
