This sticky jerk marinade is deliciously sweet: the pineapple juice is really noticeable in the end taste and the jerk flavourings buzz your tastebuds!


  • 16 spare ribs
  • 1 onion, quartered
  • 1 celery stick, cut into 4


  1. Place the spare ribs, onion, celery and allspice berries in a large saucepan. Cover with water, bring to the boil and simmer for 1 hour.
