This sticky jerk marinade is deliciously sweet: the pineapple juice is really noticeable in the end taste and the jerk flavourings buzz your tastebuds!

Ingredients

  • 16 spare ribs
  • 1 onion, quartered
  • 1 celery stick, cut into 4

Method

  1. Place the spare ribs, onion, celery and allspice berries in a large saucepan. Cover with water, bring to the boil and simmer for 1 hour.
  2. Meanwhile, put all the marinade ingredients in a saucepan and place over a medium heat. Give the mixture a good stir, bring to the boil, then reduce the heat and simmer very gently for 20 minutes, stirring occasionally, to get
