This is one of the most popular dishes at my café. You can dub it up with chilli if you want to give it some heat; however, it’s a great supper dish for kids and they may want it without the kick.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, roughly chopped
  • 1 red pepper, deseeded and cubed

Method

  1. Preheat the oven to 190°C/375°F/gas mark 5. Heat the oil in a sauté pan or saucepan over a medium heat and cook the onion and peppers for 10-15 minutes, stirring occasionally, until the onion is pale gold and soft. Meanwhile, cook the pasta in plenty of boiling
