Ingredients: 1 spring onion, green part only, finely chopped; salt and black pepper; 100 ml (3½ fl oz) Sunshine Kit Cooking Sauce; 1 onion, finely chopped; 400-500 g (14 oz-1 lb 2 oz) spaghetti; 1 garlic clove, finely chopped; 400 g can tomatoes; 2 tbsp. tomato purée; 1 thyme sprig; grated Parmesan cheese, to serve; 8 button mushrooms, cut into small dice; 400 g (14 oz) minced beef; 1 yellow pepper, deseeded and cut into small dice; 1 red pepper, deseeded and cut into small dice; 2 tbsp tomato ketchup; 1 tbsp vegetable oil

My son Zaion runs our café, Papine, in Battersea, London. Next-door is a small, innovative private school, Thames Christian College. The headteacher wanted the kids to eat freshly prepared school dinners and there we were, right on the doorstep. Zaion works with the school, to provide dishes that are a hit with all ages. This is my version of his school dinner spaghetti bolognese, here for four or five people rather than 40! Let me tell you, it’s quite a different story to the school dinner
