This is so much better than all that stodgy stuff you find on buffets every summer. Add lime to the dressing if it’s your thing.


  • 500 g (1 lb 2 oz) waxy new potatoes, halved or quartered, depending on size


  1. Put the potatoes in a saucepan and cover with water. Bring to the boil and cook for 15 minutes, or until tender. Drain, then return to the pan and immediately add the chicken stock, season and stir. Leave the potatoes to sit and absorb the stock while they cool.
  2. When the potatoes have reached room temperature, add the mayonnaise, yogurt and herbs and stir to co
