Jamaicans have nice thick water biscuits that are used both as biscuits and in cooking,, but you could use any kind for this crackersnack. It’s a little treat, a pick-me-up that you can serve with a drink or just when you feel hungry. ‘Cutters’ are little round sandwiches eaten in the Caribbean and this is my quick and easy version.

Ingredients

  • ¼ ripe mango, peeled
  • 100 g ( oz) cream cheese

Method

  1. Slice the mango flesh into thin strips.
  2. Mix the cream cheese with the chopped coriander in a bowl. Spread the crackers with the cream cheese mixture. Top with strips of mango and garnish each ‘cutter’ with a fresh coriander leaf.
