Wow...this is a pure chocolate hit! Chilli and chocolate is a great combination and chocolate makers large and small now make chilli-spiked chocolate bars. What you want in these smooth, rich truffles, based on a recipe by the chef Shaun Hill, is a really strong chocolate taste followed by a beautiful chilli buzz.

Method

Melt the chocolate in a bowl suspended over a pan of simmering water (make sure the base of the bowl doesn’t touch the water). Meanwhile, heat the cream in a saucepan until it’s just boiling. Cool slightly, then pour into the melted chocolate and stir together. Whisk the butter until it becomes light and fluffy, then whisk in the chocolate cream followed by the rum. Leav
