Wow...this is a pure chocolate hit! Chilli and chocolate is a great combination and chocolate makers large and small now make chilli-spiked chocolate bars. What you want in these smooth, rich truffles, based on a recipe by the chef Shaun Hill, is a really strong chocolate taste followed by a beautiful chilli buzz.

  1. Melt the chocolate in a bowl suspended over a pan of simmering water (make sure the base of the bowl doesn’t touch the water). Meanwhile, heat the cream in a saucepan until it’s just boiling.
