This artichoke dish, araka me anginares, has a unique delicacy. Shelling fresh peas is a little time consuming, but their matchless flavour makes the task very worthwhile. Sit on a step outside in the sunshine, and what at first seems a chore will become positively sybaritic.

Ingredients

  • 4 medium to large globe artichokes
  • juice of lemons
  • 150 ml/¼
