Ingredients: 500 g/1¼ lb potatoes, peeled and cut into small cubes; 150 ml/¼ pint/⅔ cup hot water; 4 medium-thick tuna steaks, total weight about 800 g/1¾ lb; 450 g/1 lb ripe tomatoes, peeled and chopped; 15 ml/1 tbsp fresh oregano or 5 ml/1 tsp dried oregano; 45 ml/3 tbsp chopped fresh flat leaf parsley; green salad tossed in olive oil, to serve; 3 garlic cloves, crushed; juice of 1 large lemon; 105 ml/7 tbsp extra virgin olive oil; salt and ground black pepper

September is the month when the fishermen on Alonnisos land their biggest catches of tuna, and it is also the time when the local women are hard at work making this dish, tonos plaki. It is traditional to the island and is often cooked in the ovens of the local baker, after the final batch of bread has been baked. At lunchtime, the aromas of garlic and oregano are simply intoxicating.
