Snapper is caught along most of the Australian coastline and is one of Australia’s most popular eating fish. In restaurants, it is served whole, filleted and as cutlets: the small fish are called baby snappers or squires and would normally be served whole; the larger fish, which grow to weigh 4–5 kg (8 lb<
