Our all-purpose batter for frying at The Four Horsemen is similar to a traditional Japanese tempura, except we don’t use eggs. The goal should be to keep things crisp and light as opposed to soft and spongy. It’s an extremely versatile recipe: We’ve had great results using it to fry vegetables and fish, really everything from shrimp and steamed sweet potatoes to asparagus and onions.
