Nico Villaseñor worked with us for years at The Four Horsemen (hi Nico!). He came to us a very good, albeit inexperienced, cook, with a contagious drive and curiosity. It’s important to have motivated and positive people in a professional kitchen, and being around Nico’s energy really pushed me to be more creative. This was the first dish we worked on together, and it began a long partnership that would turn out some of my favorite set lunches and desserts.
