Puntarelle alla romana is a dish that’s near and dear to my heart. We’ve put out some version of it at the restaurant every winter since we opened. Puntarelle is a sturdy and satisfyingly crisp chicory with a bracing bitterness and intense juicy quality. That being said, it can be a challenge to find outside of restaurants.
