Hot take: I prefer yellow wax beans to green beans because there’s something more delicate about them. It could also be the way they look, monochromatic but still summery. The pop of bright yellow beans against a creamy burrata backdrop is a good example. It is a simple and straightforward recipe, one that should be made when you can get some high-quality burrata and the beans are at their peak at the market—think midsummer backyard gatherings.
