Beans are the perfect platform for salmoriglio, the bright Southern Italian herb-heavy sauce that commonly accompanies meaty fish in Sicily and Calabria. We like to add some buttery anchovies to the sauce as well as some chopped Calabrian chiles for heat, and we sneak in some vinegarmacerated shallots that really pack a lot of acidity.
