I’m kind of mindlessly into fried fish. Cod, haddock, hake, smelt—I’m not too picky. Even so, I think skate is the true winner. This underdog’s thin strands of flesh have an almost crablike richness to them and remain incredibly juicy after cooking. My two favorite recipes for it follow, but honestly, you can try out all sorts of combinations on your own. With skate, sometimes all it takes is a squeeze of lemon and some aioli. Skate can be found all over the world, but it can still be a lit
