One of the annual favorites of The Four Horsemen. The feature is a simple sauce of bright orange Sungold tomatoes, blistered open with garlic and olive oil, then deglazed with white wine and finished with a knob of butter. The bright, savory liquid from the tomatoes is balanced by the butter to create a luxurious summer sauce, paired here with the crispy skate wing. This sauce works equally well with a fried chicken cutlet or spooned over some grilled bread with slabs of mozzarella cheese.<
