So many recipes influenced by the the Mediterranean or the Middle East will benefit from the addition of garlic yogurt. A few fast friends include oven-roasted cauliflower, grilled flatbreads, flaky fish over jasmine rice, and butter beans loaded with cucumbers and handfuls of cilantro. Full-fat yogurt is kind of a requirement here.

Ingredients

  • 2 cups plus 3 tablespoons (525 ml) plain full-fat yogurt

Method

In a mixing bowl, combine the yogurt, oil, lemon zest, lemon juice, and salt and stir with a rubber spatula until well combined. Taste and adjust the salt to your liking.

Transfer the yogurt to an airtight container. Store in the fridge for about 1 week.
